The Lobster Roll

My idea of the perfect summer day: a morning walk on the beach and swim in the ocean, an afternoon game of tennis with a game winning serve followed by a sunset dinner on the beach with a glass of wine and a delicious lobster roll. My tennis serve is still a work in progress, but the lobster roll is perfect!

Lobster Roll
1 pound of fresh lobster meat, cut into large chunks
1 cup good mayonaise
juice of half a lemon
2 tablespoons of butter
6 Pepperidge Farms hotdog buns

Toss lobster with mayonaise, lemon juice and season with salt and pepper to taste. Butter inside of buns and toast until golden brown. Fill buns with lobster salad and enjoy!
