SUNDAY BREAKFAST-SPICY THREE PEPPER POTATO HASH WITH FRIED EGGS



I'm not really a breakfast person, but when Sunday rolls around, I look forward to a good old fashioned gut-busting breakfast.  A stack of newspapers, fresh pot of coffee and something hearty and delicious seems to make the whole gang happy and content, at least until lunch!

I'm partial to a savory breakfast, and love food with a little kick, so I created this Three Pepper Potato Hash. The subtle heat of the peppers is countered by the rich potatoes and eggs. If you really like heat, up the cayenne pepper and enjoy.

Spicy Three Pepper Potato Hash With Fried Eggs
2 russet or Idaho potatoes, scrubbed clean and peeled
1 tablespoon butter
1 tablespoon olive oil
1 medium onion chopped
1 clove of garlic chopped
2 tablespoons canned chopped green chilies (el Paso)
1 teaspoon chopped jalapeno pepper
pinck of cayanne pepper
salt

Dice potatoes into uniform cubes (about 1/2").  Into a frying pan add the butter and olive oil and heat under medium high heat.  Add garlic, onion and jalapeno pepper and saute for one minute.  Add potatoes and saute until potatoes are browned and cooked through about 8 minutes.  Season with salt and cayanne pepper.  Fry eggs and serve on top of hash. Serves 4.
