This delicious salad, envisioned by chef David Burke, has become my favorite go-to dish this summer. With only five essential ingredients it's a cinch to make but looks like you've slaved all afternoon. Use the freshest local ingredients: asparagus, tomatoes, basil and add delicious proscuitto and creamy buratta cheese (mozzarella's hip little sister). Dress with a vinegrette and you have a stunning lunch or elegant starter for dinner-it's simple and so delicious!
Five Ingredient Buratta Salad
2 ounces fresh burrata mozzarella
1 ounce balsamic vinaigrette
2 ounces proscuitto, sliced paper thin
4 steamed,chilled asparagus spears
3 slices tomato
vegetable oil
fresh basil
Season asparagus and tomato slices with salt and pepper and drizzle with vegetable oil. Grill asparagus for three minutes, turning once. Arrange the asparagus side-by-side and top with tomatoes, prosciutto, and burrata. Drizzle with balsamic vinaigrette and garnish with a basil leaf.
