TASTE: SMOKED SALMON CANAPE



I have my daughter's class cocktail party tonight-its a pretty casual affair with everyone picking a food or beverage off the cocktail party wish list. The white wine and Pelligrino water slots were the first to fill so I decided to bring a tray of canapes. With a busy day ahead, I'm going to make my favorite little cocktail bite, a smoked salmon canape with a delicious, tangy dijon dressing. They are elegant, take less than 5 minutes to make, and taste delicious!

Smoked Salmon Canapes
2 tablespoons creme fraiche
1/2 tablespoon Dijon mustard
1/2 tablespoon honey
1/2 tablespoon freshly squeezed lemon juice
1/2 tablespoon fresh dill, minced
sliced pumpernickel bread
1/4 pound smoked salmon, sliced paper thin

In a small bowl combine the first five ingredients and add a pinch of salt to the dressing. Using a 1-1/2 inch round cookie cutter, cut of bread into circles. Spread dijon mixture onto bread rounds and top with salmon and a sprig of fresh dill. Makes about 2 dozen canapes.

i can taste them, barbara! delish.

i realized i need a new go-to canape since the closest i have is:
artichoke buttons (artichoke cup topped with slice of sundried tomato, fresh mozzarella,and a drizzle of pesto) and then an easy brie/pesto/redpepper for little slices of sourdough.
