Pie reminds me of summer--fresh fruit, a buttery crumble topping and a scoop of vanilla ice cream is simply perfection. Dessert at The Fisherman's Ball last week was memorable because of its simplicity and pure deliciousness; a charming country pie baked in a mini mason jar and served with a scoop of vanilla ice cream tucked into the mason jar lid. Not only was the presentation pure brilliance, it tasted heavenly to boot!
Here's the basic recipe for 4 pies-
2 cups fresh fruit (washed, chopped, diced, peeled, etc.)
1 teaspoon fresh lemon juice
2 tablespoons sugar
2 tablespoons flour
1 tablespoon butter divided among the jars
Crumb Topping (for 4-6 pies)
1/4C brown sugar
1/4 C flour
2 Tbs oats
1/4 tsp cinnamon
3 Tbs cold butter
Combine sugar, flour and cinnamon. Cut in butter. Add oats and stir to combine.

Preheat your oven to 375 degrees F. Rinse your mason jars in hot water and set aside. In a large bowl toss the fruit, sugar and lemon zest until everything is evenly coated. Spoon the mixture into the mason jars. The jars should be heaping with fruit. Top with the crumble and bake for approx. 35 minutes.
Add a scoop of your favorite ice cream on the side--the caterer served it in the mason jar lid which made a beautiful presentation.
