My first shortcut is to buy pizza dough from the local pizza parlor, which takes the bulk of the work out of this recipe.
I placed all my fillings into little bowls--we used Italian olives, sauteed scallions (delicious), mozzarella, ricotta, ham, proscuitto, tomato sauce, capers and roasted red peppers, but don't stop there--add your own favorite ingredients.
Cut the pizza dough into 8 pieces and roll out each piece on a board dusted with flour. Add the toppings to the middle of the dough but don't overdo it or you won't be able to close the dough.
Once filled, fold the dough in half and pinch the sides closed.
In a frying pan, add about a 1/4 inch of canola oil and heat on medium high. Add calzones, a few at a time, and fry until golden, about 2-3 minutes on each side.
Drain on a paper towel and serve hot
My favorite is on top--sauteed scallions, capers, tomato sauce and ricotta cheese-delicious!
