It's late August and I'm relishing the last few weeks of summer with long walks on the beach and afternoon visits the farmer's market. Big, beefy Long Island tomatoes are at their peak and I can't resist bringing home a basket, still warm from the afternoon sun. There is nothing better than a few thick slices of fresh from the farm tomatoes dressed with a little olive oil, salt and pepper. For breakfast, a tomato slice over warm, buttered toast is divine too. When I want to dress things up a bit, I like to serve a simple tomato relish with warm goat cheese and a peppery arugula salad. Delicious!
WARM GOAT CHEESE SALAD WITH TOMATO RELISH
Goat Cheese round 1/4" thick
Arugula
Place goat cheese on a baking sheet that has been lightly oiled. Put under broiler for a minute until top is golden brown and serve with tomato relish and arugula.
Tomato Relish
2 medium ripe tomatoes
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
salt and pepper to taste
Roughly chop tomatoes and place in a bowl. Dress with vinegar, oil, salt and pepper and serve.

So agree, there is nothing quite as delicious as a sun ripened tomato right off the vine and this year they seem to be particularly good. Even with just a little salt pepper and olive oil, they are heavenly.

YUM! We eat tomatoes with almost every meal. I love them cooked and raw and with just about everything. That goat cheese looks different, delicious, but different. :)
